Sigeumchi Namul 0

시금치나물 could be Popeye’s favorite, it’s spinach salad with sesame dressing (but only if he had been living in Korea). Yes, sigeumchi namul was originated from Korea, and I’ve instantly loved this dish from the first time I tasted it.

Sigeumchi namul is a seasoned vegetable dish, lightly blanched spinach dressed with garlic and sesame seeds (actually there are various cooking method and seasonings, but I like the simplest one). The spinach tastes sweet and it soaks up all the nutty sesamey dressing, and every bite is juicy and flavour-packed.

It takes under 5 minutes to prepare this dish. It’s quick and easy!

Fresh spinach ready to blanch.

1 pound spinach (about 0.5 kg)
2 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds
2 cloves garlic, minced
2 teaspoon sugar

1] Blanch the spinach in boiling water for 30 seconds (or less, as I usually do).

2] Remove spinach quickly and rinse in cold water to stop the cooking. Gently squeeze the
spinach to remove excess water. Cut into 3-inch lengths or less.

3] Mix soy sauce, sesame oil, sesame seeds, garlic, and sugar.

4] Add the dressing to the spinach. Serves 6 as a side dish.

5] Say, “This is it! Sigeumchi namul ala moi!

This is also my favorite meal when I’m working late at night, alongside with instant noodle of course.
